  • Skinless Boneless Chicken Breasts: Sliced into strips and marinated in peri peri seasoning, lime juice, lime zest, olive oil, tomato puree, and apple cider vinegar.

  • Chicken: Substitute chicken breasts with boneless chicken thighs for a different texture and flavour.
  • Lime Juice/Zest: Replace lime with lemon juice and lemon zest for a slightly different citrus flavour.
  • Greek Yogurt/Mayonnaise: Use sour cream for the spicy yogurt mayo.
  • Jalapeno Chilli Jam: Substitute with another spicy jam or hot sauce according to taste preferences.

Step-By-Step Guide – How To Make Peri Peri Chicken Wraps

Step 1: Marinating the Chicken

  • Combine peri peri seasoning, lime juice, lime zest, olive oil, tomato puree, and apple cider vinegar in a bowl.
  • Cut the chicken breasts into thin strips. Coat them thoroughly with the prepared marinade, cover, and refrigerate for 1-2 hours.

Step 2: Preparing Spicy Yoghurt Mayo

  • Mix Greek yogurt and mayonnaise in a bowl.
  • Add apple cider vinegar, lime juice, peri peri seasoning, and sugar. Mix well and refrigerate.

Step 3: Preparing Wrap Ingredients

  • Wash, dry, and chop the lettuce into bite-sized pieces.

Step 4: Cooking the Chicken

  • Heat a large pan and cook the marinated chicken until fully cooked and slightly charred. Set aside to rest.

Step 5: Assembling the Wraps

  • Warm the wraps to make them easier to fold, you can use a tortilla warmer or wrap them in foil and place into a hot oven for a few minutes. 
  • Spread the spicy yoghurt mayonnaise down the middle of the wrap, leaving space at the bottom for folding. Do this for each wrap.  
  • Distribute the cooked chicken evenly among the wraps.
  • Add chopped lettuce and jalapeno chili jam to each wrap.

  • Fold the bottom of each tortilla over the filling, then fold in the sides to seal.
  • Toast the wraps in a clean non-stick pan on low-medium heat for about a minute on each side until lightly browned.

  • Storage: Store any leftover assembled wraps in an airtight container in the fridge. Consume within 1-2 days for the best taste and texture.
  • Reheating: In the oven, wrap the wraps in foil and heat at a moderate temperature until heated to your liking. You can then toast them again quick if you want to crisp up the outside again.
  • Freezing: I don’t recommend to freeze fully assembled wraps as freezing can alter the texture of the tortilla and make it soggy upon thawing. However, you can freeze the cooked chicken separately. Place it in an airtight container or freezer bag. Thaw in the fridge before reheating and assembling fresh wraps. It will keep for up to 2 months. For best results, freeze the chicken in the marinade before cooking.
  • Defrosting: Defrost the chicken it in the fridge overnight. Once thawed, cook it as instructed in the recipe or reheat cooked chicken thoroughly using preferred methods and assemble fresh wraps.
