  • 4 Chicken Breasts
  • 2 tbsp Peri Peri Seasoning
  • 2 tbsp Lime Juice
  • 2 tbsp Lime Zest
  • 4 tbsp Olive Oil
  • 4 tbsp Tomato Puree
  • 1.5 tsp Apple Cider Vinegar

For the Spicy Yoghurt Mayo

  • 1/4 cup Greek Yoghurt
  • 1/4 cup Mayonnaise
  • 0.5 tsp Apple Cider Vinegar
  • 1 tsp Lime Juice
  • 1 tsp Peri Peri Seasoning
  • 0.5 tsp White Sugar

  • Mix together peri peri seasoning, lime juice, lime zest, olive oil, tomato puree, and apple cider vinegar in a bowl.
  • Cut chicken breasts into thin strips, coat thoroughly with the prepared marinade, cover, and refrigerate for 1-2 hours.
  • Combine Greek yogurt and mayonnaise, then add apple cider vinegar, lime juice, peri peri seasoning, and sugar. Mix well and refrigerate.
  • Wash, dry, and chop the lettuce into bite-sized pieces.
  • Heat a large pan, cook marinated chicken until fully done and slightly charred, let rest.
  • Spread spicy yoghurt mayo onto each tortilla wrap, leaving space at the bottom for folding.
  • Distribute cooked chicken evenly among wraps.
  • Add chopped lettuce and jalapeno chili jam to each wrap.
  • Fold the bottom of each tortilla over the filling, then fold in the sides to seal.
  • Toast the wraps in a clean ungreased pan on low-medium heat for about a minute on each side until lightly browned.
  • Serve immediately while warm.
