  • Assemble the Sausage Rolls: Divide the sausage mixture in half and shape each portion into a long log. Place each sausage log along the centre of the puff pastry rectangles, on top of the jam.

  • Seal and Cut: Brush the edges of the pastry with a little beaten egg, fold the pastry over the sausage mixture, and press the edges to seal. Use a fork to seal the edges. Cut each long sausage roll into smaller pieces, about 4-5 cm each, and place them seam-side down on the prepared baking tray, leaving space between each one.

  • Spoon a thin layer of apricot jam on top of the pastry, leaving a gap at each side.
  • Divide the sausage mixture in half and shape each portion into a long log. Place each sausage log along the centre of the puff pastry rectangles on top of the jam.
  • Brush the edges of the pastry with a little beaten egg. Fold the pastry over the sausage mixture and press the edges to seal. Use a fork to seal the edges together underneath.
  • Cut each long sausage roll into smaller pieces, about 4-5 cm each. Place them seam-side down on the prepared baking tray. Leave space in between each one to allow for expansion.
  • Score the top of each sausage rolls with a few diagonal lines then brush the tops of the sausage rolls with the beaten egg. Optionally, sprinkle with black onion seeds.
  • Bake for 25-30 minutes, or until the pastry is golden brown and puffed, and the sausage filling is cooked through.
