- Rolling Pin: We use a rolling pin to flatten the chicken breast before marinating. You’ll also need a food bag or clingfilm to place the chicken inside.
- Large Bowl: Use a large mixing bowl that is big enough to hold the marinade and the chicken breasts.
- Large Frying Pan or Cast-Iron Skillet: Use one large enough that the tortillas can lay flat inside.
- Grater: If you haven’t bought pre-grated cheese, you’ll need a grater to do it yourself.
- Sharp Knife and Chopping Board: To slice the chicken, chop the vegetables and cut the quesadillas into wedges.
- Spatula or Tongs: We use a spatula or tongs to flip the chicken while cooking and to handle the quesadillas in the skillet.
- Two Forks: Before placing in the tortillas the cooked chicken needs to be shredded. Use two forks to do this or place the chicken breasts in a stand mixer with the paddle attachment and power gently to break the chicken up inside.

- Flour Tortillas: Flour tortillas work best for this recipe. You can also make your own tortilla wraps with this recipe. I always make mine in bulk and store them in the freezer.
- Cheddar Cheese: For the best taste, choose a good-quality mature cheddar cheese.
- Mozzarella Cheese: I tend to choose pre-grated cooking mozzarella which you can also find in a block in most supermarkets. Fresh mozzarella can sometimes produce lots of liquid when melted, so I would recommend grating it up a few hours before and letting it drain in a sieve to remove any excess liquid before using in your peri-peri quesadillas.
- Red Bell Pepper And Green Bell Pepper: You can also use orange and yellow varieties too if you prefer.
- Red Onion: Slice up the onion thinly before adding.

Ingredients
For The Peri-Peri Chicken
- 2 Large Chicken Breasts
- 1 tbsp Peri-Peri Seasoning
- 1 tbsp Lemon Juice
- 1 tbsp Lemon Zest
- 2 tbsp Olive Oil
- 3 tbsp Tomato Puree
- 1 tsp White Wine Vinegar
For The Quesadillas
- 8 Large Flour Tortillas
- 100 g Cheddar Cheese
- 100 g Mozzarella Cheese
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 1 small Red Onion
- 1 tbsp Olive Oil
- 5 g Fresh Coriander Leaves, optional
Instructions
- Place a chicken breast in a food bag or between two sheets of clingfilm and flatten it using a rolling pin. Repeat with the second breast, then slice each breast in half.
- In a large bowl, mix the peri-peri seasoning, lemon juice, lemon zest, olive oil, tomato puree, and white wine vinegar.
- Add the flattened chicken pieces to the bowl and mix until well coated in the marinade. Cover and refrigerate for at least 2 hours or overnight.
- Heat a frying pan or skillet over medium-high heat.
- Cook the marinated chicken breasts for a few minutes on each side until fully cooked through.
- While the chicken cooks, grate the cheddar and mozzarella cheeses, and thinly slice the red bell pepper, green bell pepper, and red onion.
- Remove the cooked chicken from the pan and let it rest for a few minutes before shredding it with two forks.
- In the same pan, add 1 tablespoon of olive oil and sauté the sliced red bell pepper, green bell pepper, and red onion until tender and slightly caramelized, about 5-7 minutes. Remove from heat.
- Place 4 tortillas on a clean surface. Sprinkle half of the grated cheese evenly over the tortillas.
- Arrange a portion of shredded peri-peri chicken and sautéed vegetables on top of the cheese.
- Sprinkle the remaining cheese over the chicken and vegetables, then top each with another tortilla.
- Heat a large non-stick skillet or frying pan over medium heat.
