A sweet and savoury sausage roll with apricot jam. These puff pastry sausage rolls make a great snack, delicious party food or serve as part of a picnic or packed lunch. The whole family will love them! You can even freeze them unbaked for future too.
Preheat the oven to 200°C (180°C fan) or 400°F. Line a baking tray with parchment paper.
In a bowl, mix together sausage meat, chopped apricots, thyme, and breadcrumbs. Season with salt and pepper, and combine well.
On a lightly floured surface, roll out the puff pastry to about 3mm thick. Cut it into two long rectangles. If easier, you can roll the puff pastry out in portions.
Spoon a thin layer of apricot jam on top of the pastry, leaving a gap at each side.
Divide the sausage mixture in half and shape each portion into a long log. Place each sausage log along the centre of the puff pastry rectangles on top of the jam.
Brush the edges of the pastry with a little beaten egg. Fold the pastry over the sausage mixture and press the edges to seal. Use a fork to seal the edges together underneath.
Cut each long sausage roll into smaller pieces, about 4-5 cm each. Place them seam-side down on the prepared baking tray. Leave space in between each one to allow for expansion.
Score the top of each sausage rolls with a few diagonal lines then brush the tops of the sausage rolls with the beaten egg. Optionally, sprinkle with black onion seeds.
Bake for 25-30 minutes, or until the pastry is golden brown and puffed, and the sausage filling is cooked through.
Let the sausage rolls cool slightly on a wire rack before serving.
Recipe Notes
Make sure all ingredients are chilled before use for the best results. Don't allow the pastry to get too warm before baking.
Store at room temperature in an airtight container for 2 days. Alternatively, you can freeze them unbaked for up to 3 months.
