Sweet Burger Relish With Tomatoes

This sweet tomato burger relish is packed with tangy flavour and the perfect balance of sweetness and spice. Made with canned tomatoes, vinegar, and a few simple extras, it’s an easy homemade topping for burgers, fries, or sandwiches—and ideal for batch cooking and storing.

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 Yellow Onion, thinly sliced
  • 1 Garlic Clove, crushed
  • 1 Red Chilli, deseeded and finely chopped
  • 800 g Canned Chopped Tomatoes
  • 200 ml Red Wine Vinegar
  • 200 g Granulated Sugar
  • 30 g Capers, rinsed
  • 4 Baby Gherkins, finely chopped
  • A handful of Fresh Coriander, chopped
  • Sea Salt and Freshly Ground Black Pepper, to taste

Instructions

  • Heat the olive oil in a large saucepan over medium heat.
  • Add the sliced onion and cook gently for about 5–7 minutes until soft and translucent.
  • Stir in the crushed garlic and chopped red chilli and cook for another minute.
  • Pour in the chopped tomatoes, red wine vinegar, and sugar. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for around 45–60 minutes, stirring occasionally, until thick and jammy.
  • Stir in the rinsed capers, chopped gherkins, and coriander during the final 5 minutes of cooking.
  • Season to taste with sea salt and freshly ground black pepper.
  • Remove from the heat and let the relish cool before transferring it to jars or containers.

Recipe Notes

  • Use a wide pan: This helps the relish reduce faster and gives a thicker, jammy texture.
  • Adjust the spice: Add more or less chilli depending on how much heat you like.
  • Finely chop the extras: Chopping the capers and gherkins small helps them blend into the relish without big chunks.
  • Best served chilled or room temperature: Let it cool fully before using for the best flavour and texture.
  • For longer storage: Consider canning the relish using a water bath method to keep it shelf-stable.
