Smashed Cheeseburger Loaded Fries With Crispy Bacon

A delicious sharing dinner that's perfect for movie nights, get togethers and family meals. Oven baked fries topped with all your favourite cheeseburger ingredients. From smashed patties, to crispy bacon. All drizzled with a quick homemade burger sauce!
Wash and peel the potatoes, then slice them into thin, uniform-sized fries.
Place the fries in a large saucepan and rinse under cold water to remove excess starch.
Fill the saucepan with enough water to cover the fries and add a generous pinch of salt.
Bring the water to a boil over medium-high heat, then simmer the fries for 3-5 minutes.
Drain the fries in a colander and let them steam dry for about 10 minutes.
Add the olive oil to a large baking tray and place it in the oven to heat up.
In a bowl, mix the cornflour, garlic powder, onion powder, and smoked paprika.
Toss the fries in the cornflour mixture until fully coated.
Carefully remove the hot baking tray from the oven, add the fries, and coat them in the hot oil, taking care to prevent splashing.
Place the fries in the oven and bake for about 30 minutes, turning halfway through, until golden and crispy. Season with sea salt to taste.
After the fries have been baking for 10 minutes, place the bacon rashers on a baking tray, drizzle with a little oil, and bake in the oven for about 20 minutes until crispy.
While the fries and bacon are cooking, prepare the smashed burgers. Place the minced beef in a large bowl, season with sea salt and black pepper, and mix gently with your hands.
Form the beef into 4 large balls by pressing gently with cupped hands. Cover and refrigerate.
For the burger sauce, mix the mayonnaise, ketchup, and yellow mustard in a small bowl and set aside.
Gather the shredded lettuce, diced gherkins, diced tomatoes, and diced spring onions. Cover and set aside.
With about 10 minutes left for the fries, heat a large frying pan or skillet over high heat.
Place the burger balls onto the hot pan one at a time, cover each with a square of baking paper, and press down with a spatula until thin. Make a thumbprint in the centre of each patty, then remove the paper.
Fry the burgers on both sides until cooked through, then turn off the heat and let them rest.
Turn on the grill to high heat. Place the baked fries in a heat-proof serving dish.
Remove the bacon from the oven and set aside.
Break up the burgers and sprinkle the meat over the fries. Add the burger cheese slices on top.
Place the dish under the grill for 1-2 minutes until the cheese melts.
Add the rest of the toppings to the dish, break up the crispy bacon into small pieces, and sprinkle on top. Finish with a drizzle of the burger sauce. Serve immediately.

Ensure the oven is preheated to 220°C (425°F) for crispy fries. Cut the fries into similar sizes for best baking results.
You can use potato flour or all-purpose flour if you don’t have cornflour.
