Ingredients

  • 250 g Plain Dark Chocolate
  • 4 tbsp Brandy
  • 5 Eggs, separated
  • 100 g Caster Sugar
  • 150 ml Double Cream

Instructions

  • Melt the dark chocolate and brandy together in a heatproof bowl over a saucepan of simmering water (double boiler method). Stir occasionally until smooth and fully melted, then remove from heat and set aside to cool slightly.
  • In a separate large bowl, whisk the egg yolks and caster sugar together using an electric mixer or hand whisk. Continue whisking until the mixture becomes thick, pale, and creamy in texture.
  • Slowly pour the melted chocolate into the egg yolk mixture, stirring gently to combine them thoroughly.
  • In another bowl, whip the double cream using a hand mixer or whisk until it thickens and holds soft peaks. Gently fold the whipped cream into the chocolate mixture, ensuring it is well incorporated.
  • In a clean bowl, whisk the egg whites until they form stiff peaks, taking care not to over-whisk. Using a large metal spoon or spatula, gently fold the egg whites into the chocolate mixture in stages, making sure to retain as much air as possible for a light mousse.
  • Once the mixture is smooth and fully combined, divide it evenly into small serving bowls or glasses.
  • Place the bowls in the fridge and chill for 2-3 hours, allowing the mousse to set and firm up.
  • Serve chilled.

Recipe Notes

  • Key Points: When folding the egg whites into the chocolate mixture, be gentle to retain as much air as possible. This step is crucial for achieving a light and airy mousse texture. Over-mixing will result in a denser mousse.
  • Alternative Ingredients/Substitutions:
    • You can replace brandy with another liqueur like Baileys, Kahlua, or even orange liqueur for a different flavour.
    • For a non-alcoholic version, omit the brandy or substitute with an equal amount of coffee or vanilla extract for a subtle twist.
  • Storage Suggestions: Leftover mousse can be stored in the fridge for up to 3 days. Cover with plastic wrap or place in airtight containers to maintain freshness and avoid absorbing other odours from the fridge.
