Caramelised Onion Chutney - With Red Onions

A delicious sweet onion chutney that can be used in lots of ways. With simple ingredients and a little patience, you can make your own caramelised onion chutney that can be stored for up to a year.

Ingredients
 
 

  • 550 g Red Onions, finely sliced
  • 3 tbsp Olive Oil
  • 3 tbsp Dark Muscovado Sugar
  • 2 tbsp Balsamic Vinegar
  • 150 ml White Wine Vinegar
  • 150 g Dark Brown Soft Sugar
  • 1 tsp Salt
  • 1 Clove of Garlic
  • 5 g Fresh Ginger, finely grated

Instructions

  • Heat the olive oil in a large saucepan over medium-low heat. Add the finely sliced red onions and cook gently for about 20-30 minutes, stirring occasionally, until the onions become soft and start to darken in colour.
  • Once the onions are soft, add the dark muscovado sugar and stir it through the onions. Continue to cook for another 10 minutes, allowing the sugar to dissolve and caramelise the onions slightly.
  • Add the balsamic vinegar, white wine vinegar, dark brown soft sugar, salt, finely grated ginger, and the garlic clove to the saucepan. Stir the mixture well to combine all the ingredients.
  • Reduce the heat to low and let the mixture simmer gently for about an hour. Stir occasionally to prevent sticking. The chutney should thicken, and the liquid will gradually reduce.
  • Once the chutney has thickened to a jam-like consistency, remove it from the heat. Allow it to cool slightly before transferring the mixture into sterilised jars.
  • While you can eat the chutney once it has cooled, for the best flavour, let it mature in the jars for about a month.

  • Ensure that you cook the onions slowly over a low heat for maximum flavour development. This caramelisation step is crucial for achieving the rich, sweet, and tangy flavour of the chutney.
  • Stir frequently during the simmering phase to prevent the sugar from sticking to the bottom of the pan and burning, which can ruin the chutney’s taste.
  • Unopened jars of chutney can be stored for up to 6-12 months in a cool, dark place. After opening, refrigerate and use within 4-6 weeks for the best flavour and freshness.
