I love a salad that actually fills your belly and this one definitely does the job. Based on a traditional Tuscan Panzanella salad, we have added in a few extra ingredients to bring a classic salad recipe a new twist.
With pesto-soaked bread croutons, fresh mozzarella cheese, colourful roasted cherry tomatoes and more, you can serve this up as a special salad for lots of occasions.
You can also prep some of the ingredients ahead of time too, from roasting the tomatoes and creating the pesto croutons, you can have the salad components prepped and ready to assemble in no time at all.

Make the Pesto Croutons Early (Save 10 minutes): Toss the stale bread cubes with the pesto and olive oil, then bake them in advance. Once cooled, store them in an airtight container for up to 3 days. If they lose crispness, quickly re-toast them in the oven before serving.

- Storage: This salad is best served fresh, but you can store leftover components separately. Keep the roasted tomatoes, croutons, and salad ingredients in airtight containers in the fridge for up to 2-3 days. When ready to serve, combine the components and drizzle with balsamic glaze.
- Freezing: Salads don’t freeze well so I don’t recommend it. The texture of the tomatoes, croutons, and mozzarella will suffer when frozen and thawed. The fresh ingredients (like rocket leaves and basil) will wilt when frozen and don’t retain their texture.

Stale Bread Salad With Roasted Tomatoes
Ingredients
- 300 g Cherry Tomatoes
- 3 tbsp Olive Oil
- 0.5 tsp Sugar
- Sea Salt and Black Pepper , to taste
- 150 g Stale Bread
- 50 g Pesto
- 30 g Pine Nuts
- 60 g Rocket Leaves
- 100 g Kalamata Olives
- 8 Balls Mozzarella Pearls
- 6 Fresh Basil Leaves
- 2 tbsp Balsamic Glaze
Instructions
- Preheat the oven to 180°C (350°F).
- Place the cherry tomatoes in a non-metal baking dish. Season with salt, pepper, sugar, and 1 tbsp olive oil. Place in the oven and roast for 20 minutes.
- While the tomatoes roast, chop the stale bread into cubes.
- In a bowl, mix the remaining 2 tbsp olive oil and pesto. Coat the bread cubes in the pesto mixture.
- Lay the bread cubes out on a baking tray in a single layer. Add the pine nuts to one side of the tray. If you are using pre-toasted pine nuts you don't need to place them in the oven.
- After 20 minutes, place the tray with the bread and pine nuts into the oven, continuing to roast the tomatoes. Bake everything for another 10-15 minutes, turning the bread and nuts over halfway through.
- Prepare the salad: in a large bowl, add the rocket leaves, Kalamata olives, roasted tomatoes, pesto-coated bread, mozzarella balls (torn into smaller pieces), and pine nuts.
- Tear the basil leaves and scatter them over the salad.
- Drizzle the salad with balsamic glaze and season with salt and pepper to taste.
- Serve immediately.
